Weekend Supper Club Week 5: Family Style Swiss Steak, from Carla Davis

Ingredients:

3 Tablespoons flour
1 large size oven cooking bag
1 (14 1/2oz) can original style stewed tomatoes
1 (10 1/2oz) can condensed beef broth
1 medium onion, sliced
1/2 teaspoon pepper
1 (1 1/2 to 2 lbs) boneless round steak
3 medium carrots

Directions:

Preheat oven to 350 F. Place flour in cooking bag; twist end and shake to coat inside. Place bag in a 13X9X2 inch baking pan. Add tomatoes, broth, onion and pepper; squeeze bag to blend ingredients.  Cut steak into serving size pieces and place in bag in single layer. Place carrots in bag around steak. Close bag with nylon tie; cut 6 slits 1/2 inch long in top. Bake 1 hour and 15 minutes or until steak is tender. Serve over rice or potatoes.

  2. Carla, I was so excited to make the Swiss Steak because it reminded me of the first time I had ever made it. I was 18, just moved out on my own and learning how to cook for the first time. Someone gave me an electric skillet, a square one...remember those? The first thing I ever made in that skillet was Swiss Steak.....I had a challenge with finding a round steak that was thick enough. My grocery store only sells them thinly sliced, I should have had the butcher cut one for me. I think I may have cooked mine too long not allowing for the thickness/or lack therof of the steak. I loved the combination of tomatoes and beef broth and carrots, a great Sunday dinner combo. I had quite a bit of the sauce after it was done so I seperated it and poured it into a skillet, added a little flour and made gravy to pour over the meat and carrots. We had rice (of course) with it and some green beans. Thank you for the great dish Carla, it gave me lots of great memories along with the meal!

  3. Carla, I made this on Sunday. Prep for this dish is a snap! Perfect for a cozy quiet night with Sam. We loved it of course. I have never cooked with one of those oven bags. I'll do it again for sure! I made mine with salty garlic mashed potatoes. Complemented the steak and gravy perfectly. I let the steak and gravy sit in the roasting pan to cool a bit after it came out of the oven. The sauce thickened up a little that way.

  4. Carla, Sorry for the late delay. Our family has been so busy this week with baseball starting this week with our youngest. I agree with Liz. Making this dish was so easy...I too have not ever used an oven bag and it made for little mess. Love it! I loved the dish! My meat didnt come out as tender...I'm thinking because I used a little more meat in mine so it could feed my 3 boys. I also assed a little teryaki sauce to mine to spice it up a bit. I severed mine over white rice. :)
