Season 2; Week 5; Carla's Banana Bourbon Bundt Pound Cake


Carla's Banana Bourbon Bundt Pound Cake

Ingredients:
3 1/4 cups flour
1/2 tsp salt
1/2 tsp baking powder
1 - 8oz package cream cheese
1/2 cup butter
3 sups sugar
4 eggs
2 medium bananas mashed
1/4 cup bourbon
1 Tbsp vanilla
1 cup pecan pieces

Directions:
Generously grease and flour Bundt pan.  Preheat oven to 325.  Mix flour, baking powder and salt and set aside.  Beat cream cheese and butter until creamy.  Add sugar gradually beating with standing mixer 7 minutes.  
Add eggs one at a time beating 1 minute after each egg.
Put bananas, bourbon and vanilla in bowl.  Add bananas and bourbon mixture alternately with flour mixture into egg mixture.  Stir in pecans.  
Spread evenly into pan and bake for 80 minutes or until toothpick comes out clean.  I start checking it at 60 minutes.

This cake is good as a coffee cake in the morning or served with whipping cream at night.  It also freezes well but it has never made it to the freezer at my house.  I hope you all enjoy this cake, it will be great for Memorial Day weekend to snack on.

  1. Carla, I loved this cake when you made it for us, can't wait to make it myself. This also makes me want to invest in a Pampered Chef Bundt pan...also, love your little mixer! Don't ever get rid of it..

  4. Carla, of course this Banana Bourbon Bundt (BBB) cake was delicious! I forgot about these little mini bundt pans I had (I think I've used them once in 5 years) but decided to use them for this recipe. They were so cute and it enabled me to make an entire bread loaf pan size of the bundt cake for myself! We went to some friends' house on Sunday and so I "fancied" them up a bit and drizzled some cream cheese frosting on them. They were a big hit! Thanks so much for submitting this one!

  6. Carla, we loved this cake. I used Jack Daniels Single Barrel whiskey, because that's what we had on hand, and I loved the taste of the banana and whiskey combo. Ryne loved it, and ate about 1/3 of it.
